Flourless Peanut Butter Cookies

Tofu, also called bean curd, is made by coagulating soy milk and then pressing the curds into soft white blocks. It really has no flavor, whatever flavoring you put into the tofu, that is the taste that it will be like. You are probably wondering why I am telling you about tofu. Well the truth is, my friends, we are making peanut butter cookies, but these are different. These cookies do not have any eggs, butter, flour, or shortening in them, making them gluten-free and also vegan! Do not be afraid of tofu, you must embrace the tofu. You have to try new foods every once in a while! If you've never ever ever (as this sentence is turning into a Taylor Swift song...) tried tofu, this is your chance!

Ingredients:
  • 1 cup peanut butter
  • 1/4 cup firm tofu
  • 3/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt (I used sea salt but you can use just table salt if you wish!)
Instructions: 
1. Preheat your oven to 350 degrees Fahrenheit.
2. Spray two cookies sheets with cooking spray (I lay parchment paper down on my cookie sheets, it's just to keep the cookies from sticking without using cooking spray!)
3. I drained the tofu package of the liquid, and I measured out 1/4 cup of the actual tofu (the white block).
4. In a large mixing bowl (I used my Kitchen-Aid stand mixer! If you do not have one, feel free to use mixing beaters!) combine tofu and peanut butter until combined.
5. In a separate bowl, combine sugar, baking soda, and salt. Add dry mix to wet mixture and mix until combined.
6. Drop dough by tablespoon (or a cookie dough scoop) onto your baking sheets. Use a fork to slightly flatten each cookie.
7. Bake for 12-13 minutes. (The cookies will spread out quite a bit, do not think you did something wrong. They will be large and thin cookies)The cookies will be mildly golden all over and will feel VERY soft to the touch when they first come out of the oven (they will harden as they cool). 
8. After baking, allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool.  
9. Enjoy!
